Description & Taste

Hand-picked from recent burn sites across Washington and Oregon's conifer forests, our wild Burn Morels deliver a rich, earthy flavor with deep umami and a tender, honeycomb-textured bite. Emerging in flushes the spring after a forest fire — when scorched soil and warming temperatures trigger their fruiting — they shine in cream sauces, pan-sautés with butter and shallot, and over grilled meats, capturing one of the West's most ephemeral spring harvests.

Harvest Notes

These Burn Morels are gathered from recent burn sites across the conifer forests of Washington and Oregon, where scorched soil, spring rains, and warming temperatures trigger their massive post-fire fruiting flush. Foragers work the burn scars in the first spring after a fire — when morels emerge in dense patches among the blackened duff and downed timber — selecting firm, intact caps with clean hollow stems and minimal damage. Harvesting is done by hand, cutting at the base to leave the underground mycelium intact and packing carefully in the field to preserve the delicate honeycomb structure.
