In the highlands of Belén de Umbría, where clouds drift low and the forest hums with life, Finca Amazonas nurtures another quiet marvel. At 2200 MASL, under the care of David Gallego, the Catiope varietal takes root—its story shaped by altitude, intention, and the soft buzz of native bees.
These bees, vital to the farm’s living ecosystem, pollinate each bloom with precision, weaving the wild rhythm of the land into every cherry. Their presence is subtle, but their impact is profound.
This washed-process Catiope opens with the warm, familiar scent of caramel and mild fruit. On the palate, it deepens—grape and red plum unfold with a touch of spice, carried by a medium silky body. The acidity shifts with temperature: hot citric at first sip, then cool malic as it lingers. The finish is a soft echo of red plum, like the last note of a song fading into the trees.
