Description & Taste
Fresh summer chanterelles from the hardwood ridges and cove forests of Georgia's southern Appalachian mountains carry the same signature apricot aroma and golden hue as their Pacific Northwest counterparts — with a slightly richer, earthier character drawn from the region's humid, oak-dominant forest floor. Harvested at peak ripeness, they bring elegance and depth to sautéed dishes, pastas, and light cream sauces.

Harvest Notes

These Southern Appalachian chanterelles are gathered from the cove forests and hardwood ridges of northern Georgia, where summer humidity, warm soils, and the region's mixed oak and hickory canopy create the conditions chanterelles fruit beneath reliably each season. Foragers pick them by hand at peak maturity, selecting firm, golden caps with a clean apricot aroma and false gills still tight and well-defined. Harvesting is done carefully to protect the surrounding mycelium and maintain productive patches year after year.
